VWG Manchurians are a delicious and popular Indo-Chinese dish made with cauliflower (gobi), vegetables, and a spicy gravy. The cauliflower balls are coated in a batter and deep-fried until golden brown and crispy. They are then added to a flavorful gravy made with tomatoes, soy sauce, vinegar, and spices.

Ingredients:

  • 1 cup grated cauliflower
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped capsicum
  • 1 tablespoon ginger-garlic paste
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon salt
  • Oil for frying

For the gravy:

  • 1 tablespoon oil
  • 1/2 teaspoon ginger-garlic paste
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1/4 cup chopped onion
  • 1/4 cup chopped capsicum
  • 1/4 cup tomato ketchup
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1/4 cup cornstarch slurry (1 tablespoon cornstarch mixed with 1/4 cup water)
  • Salt to taste

Instructions:

  1. In a large bowl, combine the cauliflower, carrot, onion, capsicum, ginger-garlic paste, flour, cornstarch, red chili powder, garam masala, and salt. Mix well.

  2. Form the mixture into small balls.

  3. Heat oil in a frying pan over medium heat. Fry the balls until golden brown and crispy.

  4. To make the gravy, heat oil in a saucepan over medium heat. Add the ginger-garlic paste and fry for a few seconds.

  5. Add the red chili powder, garam masala, and turmeric powder and fry for a few more seconds.

  6. Add the onion and capsicum and fry until softened.

  7. Add the tomato ketchup, soy sauce, vinegar, and water. Bring to a boil.

  8. Reduce heat to low and simmer for 5 minutes.

  9. Add the cornstarch slurry and stir until the gravy thickens.
  10. Add salt to taste.

  11. Add the fried cauliflower balls to the gravy and mix well.

  12. Serve hot with rice or noodles.

Tips:

  • For extra crispy balls, coat them in bread crumbs before frying.
  • If the gravy is too thick, add more water.
  • If the gravy is too thin, add more cornstarch slurry.
  • You can also add other vegetables to the gravy, such as carrots, green beans, and bell peppers.
  • Serve the VWG Manchurians with your favorite chutney or dip.

Enjoy!
