VWG Manchurians are a delicious and popular Indo-Chinese dish made with cauliflower (gobi), vegetables, and a spicy gravy. The cauliflower balls are coated in a batter and deep-fried until golden brown and crispy. They are then added to a flavorful gravy made with tomatoes, soy sauce, vinegar, and spices.
Ingredients:
- 1 cup grated cauliflower
- 1/2 cup grated carrot
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped capsicum
- 1 tablespoon ginger-garlic paste
- 1/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon salt
- Oil for frying
For the gravy:
- 1 tablespoon oil
- 1/2 teaspoon ginger-garlic paste
- 1/4 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon turmeric powder
- 1/4 cup chopped onion
- 1/4 cup chopped capsicum
- 1/4 cup tomato ketchup
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup water
- 1/4 cup cornstarch slurry (1 tablespoon cornstarch mixed with 1/4 cup water)
- Salt to taste
Instructions:
- In a large bowl, combine the cauliflower, carrot, onion, capsicum, ginger-garlic paste, flour, cornstarch, red chili powder, garam masala, and salt. Mix well.
- Form the mixture into small balls.
- Heat oil in a frying pan over medium heat. Fry the balls until golden brown and crispy.
- To make the gravy, heat oil in a saucepan over medium heat. Add the ginger-garlic paste and fry for a few seconds.
- Add the red chili powder, garam masala, and turmeric powder and fry for a few more seconds.
- Add the onion and capsicum and fry until softened.
- Add the tomato ketchup, soy sauce, vinegar, and water. Bring to a boil.
- Reduce heat to low and simmer for 5 minutes.
- Add the cornstarch slurry and stir until the gravy thickens.
- Add salt to taste.
- Add the fried cauliflower balls to the gravy and mix well.
Serve hot with rice or noodles.
Tips:
- For extra crispy balls, coat them in bread crumbs before frying.
- If the gravy is too thick, add more water.
- If the gravy is too thin, add more cornstarch slurry.
- You can also add other vegetables to the gravy, such as carrots, green beans, and bell peppers.
- Serve the VWG Manchurians with your favorite chutney or dip.
