Murgh Makhani: A Symphony of Aromas and Flavors

 Butter Chicken (Murgh Makhani)



Ingredients:

  • For the marinade:

    • 1 kg boneless, skinless chicken, cut into bite-sized pieces
    • 1/2 cup plain yogurt
    • 1 tablespoon ginger-garlic paste
    • 1 teaspoon garam masala
    • 1 teaspoon turmeric powder
    • 1 teaspoon ground coriander
    • 1 teaspoon red chili powder
    • 1 teaspoon salt
  • For the gravy:

    • 1/4 cup butter
    • 1 onion, finely chopped
    • 1 teaspoon ginger-garlic paste
    • 1 teaspoon garam masala
    • 1 teaspoon ground coriander
    • 1/2 teaspoon red chili powder
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 1/4 cup cashew nuts, soaked in warm water for 30 minutes and then drained
    • 1/2 cup heavy cream
    • 1 teaspoon sugar
    • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
    • Salt to taste
  • For garnish:

    • Chopped cilantro
    • Slivered almonds



Instructions:

  1. In a large bowl, combine the chicken with the marinade ingredients. Mix well to coat the chicken. Cover and refrigerate for at least 30 minutes, or up to overnight.
  2. In a large saucepan, melt the butter over medium heat. Add the onion and cook until softened, about 5 minutes. Add the ginger-garlic paste and cook for 1 minute more.
  3. Add the garam masala, ground coriander, and red chili powder to the pan. Cook for 30 seconds, stirring constantly.
  4. Add the diced tomatoes and bring to a simmer. Reduce heat to low and simmer for 15 minutes, or until the tomatoes have broken down.
  5. While the tomatoes are simmering, puree the soaked cashews in a blender or food processor until smooth.
  6. Add the cashew puree to the tomato sauce and cook for 5 minutes more.
  7. Stir in the heavy cream, sugar, fenugreek leaves, and salt to taste.
  8. Add the marinated chicken to the pan and bring to a simmer. Reduce heat to low and cook for 15-20 minutes, or until the chicken is cooked through.
  9. Garnish with cilantro and slivered almonds.
  10. Serve hot with rice or naan.



Tips:

  • For a richer flavor, use bone-in, skin-on chicken thighs.
  • If you don't have fenugreek leaves, you can substitute 1/4 teaspoon ground fenugreek.
  • To make the gravy ahead of time, cook it up to step 6. Let cool completely, then store in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the gravy over medium heat and proceed with step 7.
