Butter Chicken (Murgh Makhani)
Ingredients:

For the marinade:
- 1 kg boneless, skinless chicken, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon red chili powder
- 1 teaspoon salt

For the gravy:
- 1/4 cup butter
- 1 onion, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1/2 teaspoon red chili powder
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/4 cup cashew nuts, soaked in warm water for 30 minutes and then drained
- 1/2 cup heavy cream
- 1 teaspoon sugar
- 1/2 teaspoon dried fenugreek leaves (kasuri methi)
- Salt to taste

For garnish:
- Chopped cilantro
- Slivered almonds
Instructions:
- In a large bowl, combine the chicken with the marinade ingredients. Mix well to coat the chicken. Cover and refrigerate for at least 30 minutes, or up to overnight.
- In a large saucepan, melt the butter over medium heat. Add the onion and cook until softened, about 5 minutes. Add the ginger-garlic paste and cook for 1 minute more.
- Add the garam masala, ground coriander, and red chili powder to the pan. Cook for 30 seconds, stirring constantly.
- Add the diced tomatoes and bring to a simmer. Reduce heat to low and simmer for 15 minutes, or until the tomatoes have broken down.
- While the tomatoes are simmering, puree the soaked cashews in a blender or food processor until smooth.
- Add the cashew puree to the tomato sauce and cook for 5 minutes more.
- Stir in the heavy cream, sugar, fenugreek leaves, and salt to taste.
- Add the marinated chicken to the pan and bring to a simmer. Reduce heat to low and cook for 15-20 minutes, or until the chicken is cooked through.
- Garnish with cilantro and slivered almonds.
- Serve hot with rice or naan.
Tips:
- For a richer flavor, use bone-in, skin-on chicken thighs.
- If you don't have fenugreek leaves, you can substitute 1/4 teaspoon ground fenugreek.
- To make the gravy ahead of time, cook it up to step 6. Let cool completely, then store in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the gravy over medium heat and proceed with step 7.
